Tomato Sauce

Ripe tomatoes, aromatic garlic, and fragrant herbs meld together to create a versatile sauce perfect for pasta, pizza, or dipping.

Ingredients

Makes 1 large batch

  • 4 finely chopped small onions
  • 4 crushed cloves garlic
  • 4 tins organic chopped tomatoes
  • 40g sundried tomatoes soaked & chopped
  • 1 tbsp. mixed dried herbs
  • Olive oil
  • Sea salt
  • Cracked black pepper

Method

  1. Sweat the onion and mixed dried herbs in a little olive oil until softened.
  2. Add the tin of tomatoes, crushed garlic and sundried tomatoes. Allow the tomato sauce to stew gently over a low flame until it thickens and reduces in volume, this will take approx. 1 hour.
  3. When most of the excess liquid has evaporated, season with salt and pepper and allow to cool.
