Aimed at home cooks that wish to expand their general cookery skills the Intermediate cookery week is all about mastering the core cookery skills required to build your confidence and competency in the kitchen.

Meat, poultry, fish, sauces, dressings, vegetables, garnishing, bread, pastries, ice creams, sorbets and desserts with a range of dishes and a fusion of flavours from around the world all condensed into five days!

Each day on this structured course, you will be working with fantastic local produce and you will be guided by our experienced chef tutors through a wide range of dishes to build your repertoire. Each day you will enjoy one of the dishes you have made for lunch that day with the afternoon spent bringing other dishes together which you will be able to take-away for dinner.

At the end you will have learned a broad range of essential intermediate cookery skills, concepts, recipes and organisational techniques. will leave the course with good skills, and bags of confidence and passion to recreate the many recipes and ideas that you have learned on family and friends.

Classic French Style Cassoulet

Ginger and Cardamom Poached Pears
with Rose Scented Set Yoghurt and Pistachio Shortbread.

Whole Stuffed Baby Squid with Chorizo
with Tomato and Chermoula Stew and Nduja Bread.

Sweet Crusted Choux Buns
Filled with Chocolate Mousse.
