Banana Choc-Chip Muffins

Ingredients
Makes 9 Muffins
- 3 eggs
- 300g banana
- 170ml corn oil
- 1 tsp. vanilla extract
- 180g light brown sugar
- 240g plain flour
- 8g baking powder
- 60g milk chocolate
- 60g white chocolate
Method
- Add the eggs, banana, oil, vanilla and sugar to the jug blender attachment and give a couple of pulses.
- Add the flour and baking powder and stir by hand until smooth.
- Stir in the chocolate chips.
- Put the mix into a piping bag.
- Pipe the mix evenly into 9 muffin cases.
- Bake in a pre-heated oven at 170°C for 25-30 minutes.
- Allow to cool slightly in the tin before moving onto a cooling rack.
