Graduate Video: Glebe House

Glebe House is a guest house, restaurant and 15 acre smallholding set in the heart of East Devon in an area of outstanding natural beauty. With far reaching views over the rolling hills of the Coly Valley, and a short drive from the Jurassic coast, Glebe is a unique foodie retreat in the beautiful English countryside.  

Chef Patron at Glebe House is Hugo Heier who established the business with his wife, Olive who after time spent living in Italy set about turning Glebe House into an English ‘agroturismo’ (a working farm with accommodation and small restaurants generously showcasing all of the artisan products they produce) with an emphasis on food and art experiences. They built a vegetable garden with a polytunnel, cutting gardens, an on site bakery and temperature controlled ageing room for salumi production. Each would play a key role in supporting the artisan techniques that go into the food at Glebe House.

Hugo’s food is heavily influenced by his time spent in Italy over the years and artisan techniques, nose to tail cookery and seasonality define the cooking at Glebe House.  As a former Ashburton Chefs Academy graduate, we took our current crop of Culinary Arts students to visit Hugo and be inspired by his journey.
