Italian Plus - Cookery Weekend

Two-day cookery course

Experience the flavours of the Italian countryside on this fantastic culinary weekend and return home with the confidence to create your own repertoire from this rich and vibrant cuisine.

Our two-day Italian cookery course starts at 9.30am on Saturday; after a short health and safety talk, we begin cooking. The course is almost entirely hands-on so you’ll be involved with preparing dishes throughout the weekend. Over the course of two days we’ll be producing fresh pasta, homemade breads, authentic Italian pizzas, and flavoursome sauces as well as a delicious dessert such as tiramisu or zabaglione.

Because there are two full days cooking, you’ll have opportunity not only to learn more recipes and techniques, but to work on more complex dishes that require longer preparation time like Beef and pancetta tortellini with pesto or Budino brulee with polenta biscuits.

We use local, seasonal and organic ingredients wherever possible, which means that course content can vary slightly depending on the produce available to us. We also have a range of Italian olive oils, aged balsamic vinegars and specialist risotto rice both for use on the course and available for our students to buy.

As with all our cookery courses, the skills you learn will be used in creating mouthwatering dishes which you will be able to taste. You will prepare a light lunch on Saturday followed later in the day around 5pm by a sample menu and a glass of wine with your fellow students.

On Sunday you will work through till around 2.30pm and your course will finish with the three course meal you have prepared, a glass of wine and, most importantly, an opportunity to review your cookery course with a question and answer session and informal discussions around the table over lunch.
