One day cookery course - Level 2
Using the best local game we can find along with some
superb Gastro! dishes, this course is one of the truly seasonal
in the calendar.
Only available in winter months, the course
is a favourite as a gift to introduce game into a repertoire, as
well as being welcomed by country-dwellers as a course to
build skills.
You will be working hands-on in the preparation
and cooking of some great game and other dishes to create a
fantastic three course meal.
Skills you will learn:
• Preparation and cooking of feathered game (including
plucking and drawing)
• Knife skills
• Making stock and sauces
• Preparation and cooking of one other game dish either meat
or fish
Typical recipes:
• Baked Flat Mushrooms with Sautéed Chicken Livers, Pigeon
Breast and Lentils
• Roast Loin Venison with Caramelised Fig Tart and Wild
Mushrooms
• Roast Partridge on Red Onion Compote, Parsnip Purée and
Cassis Jus
