Gastro! Game Plus
Two day cookery course
This two day course uses the best local game we can find
- along with some great Gastro dishes. You would expect to
be creating two or three classic Game dishes over the two
days - but we also like to give a modern twist sometimes to
a classic dish. This is an exciting course and one of the
few truly seasonal events of the culinary year.
You could expect to be working with Dartmoor produce such
as pheasant, partridge or woodcock, as well as venison, rabbit,
hare and wild duck - plus a few hearty British puddings to
finish things off! You will be working hands-on in the preparation
and cooking of game in addition to other dishes and skills
such as sauce-making, maybe home-smoking, terrines and pate.
But as this is part of our Gastro! courses, you may well also
be tasting hand-picked scallops or line-caught mackerel from
Salcombe if the weather's right!
As with all our cookery courses, the skills you learn will
be used in creating mouthwatering dishes which you will be
able to taste. You will prepare a light lunch on Saturday
followed later in the day around 5pm by a sample menu and
a glass of wine with your fellow students.
On Sunday you will work through till around 2.30pm and your
course will finish with the three course meal you have prepared,
a glass of wine and, most importantly, an opportunity to review
your cookery course with a question and answer session and
informal discussions around the table over lunch.
